Mashed Potatoes

Ingredients

  • 3 lbs russet potatoes
  • ½ cup half and half
  • 6 Tbsp unsalted butter
  • ½ cup sour cream
  • 1 Tbsp salt
  • to taste freshly ground black pepper

Instructions

  1. Rinse the potatoes under cold water and transfer them to a pot.
  2. Cover the potatoes with cold water by 1 inch and set over medium-high heat to boil.
  3. Add salt to the water and boil until the potatoes are tender, about 10 to 15 minutes.
  4. While the potatoes are cooking, heat the half and half and butter until warm.
  5. Drain the potatoes and pass them through a food mill or potato ricer back into the pot.
  6. Add the warm half and half mixture and sour cream, then gently stir until combined.
  7. Season with salt and pepper to taste and serve warm.
