Classic Mashed Potatoes

Ingredients

The potatoes

  • 2 lbs Yukon Gold potatoes, peeled & chopped into 1 inch cubes

The mix-ins

  • ½ cup unsalted butter
  • 1 to 1½ tsp salt
  • ¼ tsp ground pepper
  • ¼ cup whole milk
  • ¼ cup plain cream cheese

Instructions

  1. 1. Boil a large pot of water and cook the potatoes until soft.
  2. 2. Drain the water from the cooked potatoes.
  3. 3. Pass the potatoes through a ricer into a bowl.
  4. 4. In the same pot, melt butter with salt, pepper, milk, and cream cheese over low heat.
  5. 5. Stir until the butter has melted and combined with the other ingredients.
  6. 6. Add the riced potatoes back to the pot and mix well.
  7. 7. Taste and adjust seasoning with more salt, pepper, butter, or milk as needed.
