Classic Mashed Potatoes

Yukon Gold potatoes, peeled & chopped into 1 inch cubes

plain cream cheese
Instructions
- 1. Boil a large pot of water and cook the potatoes until soft.
- 2. Drain the water from the cooked potatoes.
- 3. Pass the potatoes through a ricer into a bowl.
- 4. In the same pot, melt butter with salt, pepper, milk, and cream cheese over low heat.
- 5. Stir until the butter has melted and combined with the other ingredients.
- 6. Add the riced potatoes back to the pot and mix well.
- 7. Taste and adjust seasoning with more salt, pepper, butter, or milk as needed.
