Cheesy Mashed Potatoes
Ingredients
The potatoes

Yukon gold potatoes or russet potatoes, peeled and cut into 2-inch cubes

to cover potatoes

The creamy mixture

cream cheese, softened

milk of choice, at or near room temperature

sour cream, at or near room temperature

butter

shredded cheddar cheese, divided
Instructions
- 1. Add cubed potatoes to a large pot and cover with cold water, adding a pinch of salt.
- 2. Bring the water to a boil, then reduce heat and simmer for 20 minutes until the potatoes are tender.
- 3. Drain the potatoes and transfer them to a large mixing bowl.
- 4. Lightly mash the potatoes with a potato masher.
- 5. Preheat the oven to 350°F.
- 6. Melt the butter in a microwave-safe bowl for about 30 seconds.
- 7. Add the melted butter, cream cheese, milk, sour cream, and ½ cup of shredded cheddar to the potatoes and mash until fluffy.
- 8. Taste and add more salt if desired.
- 9. Transfer the mixture to a baking dish and smooth the top.
- 10. Sprinkle the remaining cheddar cheese on top and cover with aluminum foil.
- 11. Bake for 30 minutes, then remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
- 12. Let stand for 5 minutes before serving.
