Ingredients

The potatoes

  • 5 pounds Yukon Gold potatoes, peeled and cut into 2-inch pieces
  • 1 tablespoon salt
  • 8 ounces cream cheese, cut into pieces
  • ½ cup salted butter, cut into tablespoon-sized pieces
  • ¾ cup sour cream
  • ¼ cup milk
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

The topping

  • 1 cup panko or regular bread crumbs
  • cup freshly grated Parmesan cheese
  • 6 tablespoons butter, melted

Instructions

  1. Cook the potatoes until tender by boiling or using a pressure cooker.
  2. Add cream cheese and butter to the drained potatoes and let them soften.
  3. Mash the potatoes with sour cream, milk, garlic powder, and pepper until creamy.
  4. Spread the mashed potatoes evenly in a greased 9x13-inch baking dish.
  5. For the topping, combine bread crumbs and Parmesan cheese, then mix with melted butter.
  6. If baking immediately, spread the topping over the mashed potatoes and bake at 375°F for 40-50 minutes.
  7. If making ahead, refrigerate the potatoes and topping separately, then bake as directed when ready.
