Loaded Mashed Potatoes

shredded cheddar cheese, divided

bacon, cooked and crumbled

half and half or milk for thinning
Instructions
- Preheat the oven to 350°F and spray a 2-quart baking dish with cooking spray.
- Cut the potatoes into chunks and place them in a large saucepan with garlic and a pinch of salt, covering with water.
- Bring to a boil, then reduce to a simmer and cook for about 15 minutes until fork-tender.
- Drain the potatoes and return them to the pot, then add diced butter and mash to the desired consistency.
- Stir in sour cream, chives, remaining salt, and black pepper, then fold in half of the cheese.
- If desired, add half-and-half one tablespoon at a time until reaching the desired consistency.
- Transfer the potato mixture to the prepared baking dish, sprinkle with the remaining cheese, and top with bacon.
- Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10 minutes until bubbly.
