Loaded Mashed Potatoes

Ingredients

The potatoes

  • 1 ½ pounds Yukon Gold potatoes, peeled and cubed
  • 1 ½ pounds russet potatoes, peeled and cubed

The flavorings

  • 3 cloves garlic, peeled and sliced
  • 1 teaspoon sea salt, divided
  • ½ cup unsalted butter
  • 1 cup sour cream
  • 2 tablespoons chopped fresh chives
  • ¼ teaspoon freshly ground black pepper

The toppings

  • 1 ½ cups shredded cheddar cheese, divided
  • 8 ounces bacon, cooked and crumbled

Optional ingredients

  • to taste half and half or milk for thinning

Instructions

  1. Preheat the oven to 350°F and spray a 2-quart baking dish with cooking spray.
  2. Cut the potatoes into chunks and place them in a large saucepan with garlic and a pinch of salt, covering with water.
  3. Bring to a boil, then reduce to a simmer and cook for about 15 minutes until fork-tender.
  4. Drain the potatoes and return them to the pot, then add diced butter and mash to the desired consistency.
  5. Stir in sour cream, chives, remaining salt, and black pepper, then fold in half of the cheese.
  6. If desired, add half-and-half one tablespoon at a time until reaching the desired consistency.
  7. Transfer the potato mixture to the prepared baking dish, sprinkle with the remaining cheese, and top with bacon.
  8. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10 minutes until bubbly.
