Cheesy Garlic Mashed Potatoes

Ingredients

The potatoes

  • lbs Yellow Potatoes
  • 5 cloves Garlic
  • to taste N/A Kosher or Sea Salt

The creamy mixture

  • 2 tbsp Unsalted Butter
  • 2 tbsp Whole Milk
  • ¼ cup Sour Cream
  • ¾ cup shredded Cheddar Cheese
  • ¾ cup shredded Monterey Jack Cheese
  • to taste N/A freshly cracked Black Pepper

Instructions

  1. Wash, peel, and chop the potatoes into 1" pieces.
  2. Peel and smash three garlic cloves, then mince the remaining two garlic cloves.
  3. Place the chopped potatoes and smashed garlic in a pot, cover with cold water, add salt, and bring to a boil.
  4. Boil for 6-8 minutes until the potatoes are easily pierced with a fork, then drain the water.
  5. Add butter and minced garlic to the potatoes and mash together.
  6. Stir in milk and sour cream until smooth.
  7. Mix in the cheeses until melted and fully combined, then season with salt and pepper to taste.
  8. Serve hot.
