Instructions
- Preheat the oven and prepare the garlic by peeling the outer layers and cutting off the top.
- Wrap the garlic with thyme and drizzle with olive oil, then roast for about 35-40 minutes.
- Peel and chop the russet potatoes into even chunks and place them in cold water.
- Rinse the potatoes until the water runs clear, then boil in salted water until fork-tender.
- Drain the potatoes and return them to the stove to remove excess moisture.
- In a large bowl, combine the hot potatoes with roasted garlic, butter, sour cream, cream cheese, and black pepper.
- Mash the mixture, adding warm milk until smooth and fluffy, then season with salt and pepper to taste.
- Garnish with parsley or chives before serving warm.
