Ingredients

Roasted Garlic

  • 1-2 heads garlic
  • 1-2 sprigs fresh thyme
  • 1 teaspoon olive oil

Potatoes

  • 2-2 ½ pounds russet potatoes
  • 1-2 teaspoons salt
  • 3-4 ounces soft butter
  • cup sour cream
  • 4 ounces cream cheese
  • to taste salt and freshly ground black or white pepper

Garnish

  • to taste chopped parsley or chives

Instructions

  1. Preheat the oven and prepare the garlic by peeling the outer layers and cutting off the top.
  2. Wrap the garlic with thyme and drizzle with olive oil, then roast for about 35-40 minutes.
  3. Peel and chop the russet potatoes into even chunks and place them in cold water.
  4. Rinse the potatoes until the water runs clear, then boil in salted water until fork-tender.
  5. Drain the potatoes and return them to the stove to remove excess moisture.
  6. In a large bowl, combine the hot potatoes with roasted garlic, butter, sour cream, cream cheese, and black pepper.
  7. Mash the mixture, adding warm milk until smooth and fluffy, then season with salt and pepper to taste.
  8. Garnish with parsley or chives before serving warm.
