Garlic Mashed Red Potatoes

Instructions
- Preheat the oven to 400°F.
- Cut the top off the garlic head to expose the cloves, season with thyme, and drizzle with oil.
- Wrap the garlic in foil and roast for about 30 minutes until soft and golden.
- Let the garlic cool, then squeeze out the individual cloves.
- Scrub and cut the red potatoes into even-sized chunks.
- Place the potatoes in a pot with salt and enough water to cover them.
- Bring to a boil and cook until fork-tender, then drain the potatoes.
- Reheat the drained potatoes on the stovetop to remove moisture.
- In a large bowl, combine the potatoes, butter, sour cream, roasted garlic, and black pepper.
- Mix while gradually adding warm milk until the desired consistency is achieved.
- Season to taste with salt and pepper.
