Garlic Mashed Red Potatoes

Ingredients

  • 2 medium or 1 large garlic head
  • 1-2 sprig thyme
  • 1-2 teaspoons salt
  • 2-2½ pounds red potatoes
  • 3-4 ounces butter (soft)
  • cup sour cream (room temperature)
  • ¾-1 cup warm milk
  • to taste black pepper
  • to taste chopped parsley (for garnishing)

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the top off the garlic head to expose the cloves, season with thyme, and drizzle with oil.
  3. Wrap the garlic in foil and roast for about 30 minutes until soft and golden.
  4. Let the garlic cool, then squeeze out the individual cloves.
  5. Scrub and cut the red potatoes into even-sized chunks.
  6. Place the potatoes in a pot with salt and enough water to cover them.
  7. Bring to a boil and cook until fork-tender, then drain the potatoes.
  8. Reheat the drained potatoes on the stovetop to remove moisture.
  9. In a large bowl, combine the potatoes, butter, sour cream, roasted garlic, and black pepper.
  10. Mix while gradually adding warm milk until the desired consistency is achieved.
  11. Season to taste with salt and pepper.
