Instructions
- Roast the garlic in a dry skillet over medium-low heat until browned and soft, about 20 to 25 minutes, then let it cool and mince.
- In a large pot, add the quartered potatoes and salt, then cover with cold water.
- Bring the water to a boil and cook the potatoes until tender, about 10 to 15 minutes, then drain.
- Return the potatoes to the pot and mash until smooth.
- Fold in melted butter and minced garlic until combined.
- Add milk gradually until the desired consistency is reached, then season with salt and pepper.
- Garnish with chives if desired.
