Garlic Mashed Potatoes

Ingredients

The potatoes

  • 5 pounds Russet potatoes

The garlic

  • 40 cloves garlic

The mixture

  • 1 cup butter
  • cups milk
  • to taste salt
  • to taste freshly ground black pepper
  • optional chopped fresh chives

Instructions

  1. Roast the garlic in a dry skillet over medium-low heat until browned and soft, about 20 to 25 minutes, then let it cool and mince.
  2. In a large pot, add the quartered potatoes and salt, then cover with cold water.
  3. Bring the water to a boil and cook the potatoes until tender, about 10 to 15 minutes, then drain.
  4. Return the potatoes to the pot and mash until smooth.
  5. Fold in melted butter and minced garlic until combined.
  6. Add milk gradually until the desired consistency is reached, then season with salt and pepper.
  7. Garnish with chives if desired.
