Mashed Red Potatoes

Instructions
- 1. Boil a large pot of salted water.
- 2. Add the potatoes and cook until tender, about 20 minutes.
- 3. Drain the potatoes.
- 4. In the same pot, melt the butter over medium heat and cook the garlic for 45 seconds.
- 5. Stir in the warmed cream.
- 6. Return the potatoes to the pot and mash until creamy, leaving some chunks for texture.
- 7. Stir in salt and pepper, then sprinkle with parsley before serving.
