Easy Mashed Red Potatoes

Instructions
- Wash the red potatoes and slice them into 1-inch pieces.
- Place the potatoes in a large pot and cover with 1 inch of cold water and ½ teaspoon of salt.
- Bring the water to a boil and cook the potatoes until fork-tender, about 12-15 minutes.
- Drain the water and set the potatoes aside.
- In the same pot, melt the butter over medium heat and sauté the minced garlic until golden.
- Stir in the half-and-half and remaining salt, warming for about a minute.
- Return the cooked potatoes to the pot and mash them to the desired consistency.
- Stir in the sliced chives and season with black pepper and additional salt if needed.
