Easy Mashed Red Potatoes

Ingredients

The potatoes

  • 2 pounds red potatoes
  • 1 teaspoon kosher salt

The flavorings

  • ¼ cup unsalted butter
  • 2-3 cloves garlic
  • ½ cup half-and-half
  • ¼ cup sliced chives
  • to taste freshly ground black pepper

Instructions

  1. Wash the red potatoes and slice them into 1-inch pieces.
  2. Place the potatoes in a large pot and cover with 1 inch of cold water and ½ teaspoon of salt.
  3. Bring the water to a boil and cook the potatoes until fork-tender, about 12-15 minutes.
  4. Drain the water and set the potatoes aside.
  5. In the same pot, melt the butter over medium heat and sauté the minced garlic until golden.
  6. Stir in the half-and-half and remaining salt, warming for about a minute.
  7. Return the cooked potatoes to the pot and mash them to the desired consistency.
  8. Stir in the sliced chives and season with black pepper and additional salt if needed.
