Classic Mashed Potatoes

Ingredients

The potatoes

  • 3 lbs peeled russet potatoes, chopped into 1 1/2 inch cubes
  • 1 teaspoon salt, divided

The mixture

  • ¾ cup skim milk
  • 4 tablespoons light butter, sliced
  • 1/8 – ¼ teaspoon garlic powder
  • 1/8 teaspoon black pepper

Instructions

  1. 1. Place the cubed potatoes in a large pan with cold water and add ½ teaspoon of salt.
  2. 2. Cover and bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. 3. Drain the potatoes and transfer them to a mixing bowl.
  4. 4. Microwave the milk and butter together until warm.
  5. 5. Beat the potatoes while slowly adding the milk and butter mixture.
  6. 6. Add the remaining salt, garlic powder, and black pepper, and mix until just combined.
