Microwave Mashed Potatoes

Ingredients

The potatoes

  • 1 pound russet potatoes, peeled and diced
  • ¾ teaspoon salt

The cream

  • cup milk, half and half, or heavy cream

The butter

  • 4 tablespoons butter, cut into chunks

Instructions

  1. Place potatoes in a microwave-safe bowl and cover with cold water, adding ½ teaspoon of salt.
  2. Cover the bowl with an upside-down microwave-safe plate and microwave for 10 minutes.
  3. Let the bowl sit for 1 minute after microwaving, then carefully remove the plate and check if the potatoes are fork-tender.
  4. If not tender, replace the plate and microwave in 1-minute increments until cooked through.
  5. Heat the milk or cream in a microwave-safe container for 30 to 45 seconds until warm.
  6. Drain the potatoes and add butter, then mash using a fork or potato masher.
  7. Stir in half of the warm milk or cream and mix until desired consistency is reached.
  8. Add remaining salt and adjust seasoning with salt and pepper to taste.
  9. Serve and enjoy!
