Microwave Mashed Potatoes
Ingredients
The potatoes

russet potatoes, peeled and diced

The cream

cup
milk, half and half, or heavy cream
The butter

tablespoons
butter, cut into chunks
Instructions
- Place potatoes in a microwave-safe bowl and cover with cold water, adding ½ teaspoon of salt.
- Cover the bowl with an upside-down microwave-safe plate and microwave for 10 minutes.
- Let the bowl sit for 1 minute after microwaving, then carefully remove the plate and check if the potatoes are fork-tender.
- If not tender, replace the plate and microwave in 1-minute increments until cooked through.
- Heat the milk or cream in a microwave-safe container for 30 to 45 seconds until warm.
- Drain the potatoes and add butter, then mash using a fork or potato masher.
- Stir in half of the warm milk or cream and mix until desired consistency is reached.
- Add remaining salt and adjust seasoning with salt and pepper to taste.
- Serve and enjoy!
