Ingredients

The potatoes

  • 5 pounds russet potatoes, peeled and cut into large, uniform sized pieces
  • 2 tablespoons salt (for boiling)
  • 1 cup butter, melted (2 sticks)
  • 1 ½ cups hot milk

Seasoning

  • to taste freshly ground black pepper

Instructions

  1. 1. In a large pot, add potatoes and 2 tablespoons of salt, then cover with cold water by 1 inch.
  2. 2. Bring to a boil over medium-high heat and partially cover the pot.
  3. 3. Cook until potatoes are fork-tender, about 10 to 15 minutes, stirring occasionally.
  4. 4. Drain the potatoes well and return them to the pot.
  5. 5. Mash the potatoes to a uniform consistency.
  6. 6. Fold in the melted butter until just incorporated.
  7. 7. Slowly stir in 1 ½ cups of hot milk, adding more if needed to adjust the consistency.
  8. 8. Season with salt and pepper to taste.
