Best Ever Mashed Potatoes

The potatoes

russet potatoes, peeled and cut into large, uniform sized pieces

salt (for boiling)

butter, melted (2 sticks)

hot milk
Seasoning

Instructions
- 1. In a large pot, add potatoes and 2 tablespoons of salt, then cover with cold water by 1 inch.
- 2. Bring to a boil over medium-high heat and partially cover the pot.
- 3. Cook until potatoes are fork-tender, about 10 to 15 minutes, stirring occasionally.
- 4. Drain the potatoes well and return them to the pot.
- 5. Mash the potatoes to a uniform consistency.
- 6. Fold in the melted butter until just incorporated.
- 7. Slowly stir in 1 ½ cups of hot milk, adding more if needed to adjust the consistency.
- 8. Season with salt and pepper to taste.
