Mashed Potatoes

Ingredients

The potatoes

  • 2 lbs russet or Yukon Gold potatoes

The mix-ins

  • ½ cup butter (or vegan butter)
  • 1 cup non-dairy milk (if making vegan)
  • to taste salt and pepper

Instructions

  1. Peel and chop the potatoes into even-sized pieces.
  2. Boil the potatoes in salted water until tender.
  3. Drain the potatoes and return them to the pot.
  4. Add melted butter and non-dairy milk to the potatoes.
  5. Mash the potatoes until smooth and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, optionally topped with additional butter or gravy.
