Ingredients

The base

  • 3 pounds sweet potatoes

The mix-ins

  • 3 tablespoons vegan butter
  • ⅓ - ½ cup oat milk or coconut milk
  • 2 cloves garlic
  • ½ teaspoon sea salt
  • pinch black pepper
  • 1 pat vegan butter (extra)
  • to taste chopped parsley (optional)

Instructions

  1. Boil sweet potatoes in a large pot of water for 15-18 minutes until fork tender.
  2. Drain the sweet potatoes thoroughly to remove excess liquid.
  3. Mash the potatoes briefly to break them up.
  4. In a small bowl, combine the vegan milk and vegan butter and microwave until hot and melted.
  5. Add the milk and butter mixture to the mashed potatoes along with minced garlic and sea salt, and mash until smooth and creamy.
  6. Adjust consistency with more milk if needed.
  7. Serve topped with black pepper, chopped parsley, and an extra pat of vegan butter.
