Instructions
- Boil sweet potatoes in a large pot of water for 15-18 minutes until fork tender.
- Drain the sweet potatoes thoroughly to remove excess liquid.
- Mash the potatoes briefly to break them up.
- In a small bowl, combine the vegan milk and vegan butter and microwave until hot and melted.
- Add the milk and butter mixture to the mashed potatoes along with minced garlic and sea salt, and mash until smooth and creamy.
- Adjust consistency with more milk if needed.
- Serve topped with black pepper, chopped parsley, and an extra pat of vegan butter.
