Instructions
- Peel and cut the sweet potatoes into 1-inch cubes.
- Place the sweet potatoes in a large pot and cover with cold water by 1 inch, adding 1 tablespoon of salt.
- Bring the water to a boil, then reduce heat to maintain a gentle boil and cook for 10 to 15 minutes until tender.
- Drain the potatoes and return them to the pot.
- Add butter, milk, maple syrup, salt, and pepper, then mash until smooth and well combined.
- Season to taste and serve topped with more butter and fresh thyme if desired.
