Instructions
- Rinse, peel, and cut the sweet potatoes into chunks, then add to a medium saucepan with water covering them by at least an inch.
- Bring to a boil over high heat, then reduce heat and cook until tender, about 12 minutes.
- Drain water and simmer for one more minute to evaporate excess water.
- For baking, pierce sweet potatoes, wrap in foil, and bake at 400°F for 50-60 minutes until tender.
- For sweet mashed potatoes, mash the potatoes, then mix in butter, heavy cream, maple syrup, allspice, nutmeg, and salt.
- For savory mashed potatoes, roast garlic, then mix mashed sweet potatoes with butter, sour cream, roasted garlic, and black pepper, adding warm milk until fluffy.
- Season savory mashed potatoes with salt and pepper, and serve warm garnished with thyme or parsley.
