  • cup heavy cream
  • 3 tablespoons maple syrup or honey

  • ¼ teaspoon nutmeg spice
  • to taste salt
  • for garnishing pecans

Savory Mashed Potatoes

  • 2 medium or 1 large garlic head
  • 1 teaspoon oil
  • 1-2 sprigs thyme
  • 1-2 teaspoons salt (divided)
  • 3 pounds sweet potatoes
  • 2-3 ounces softened butter
  • ¼ - ⅓ cup sour cream (room temperature)
  • ½ cup warm milk
  • to taste salt and freshly ground black pepper
  • for garnishing chopped parsley or thyme

Instructions

  1. Rinse, peel, and cut the sweet potatoes into chunks, then add to a medium saucepan with water covering them by at least an inch.
  2. Bring to a boil over high heat, then reduce heat and cook until tender, about 12 minutes.
  3. Drain water and simmer for one more minute to evaporate excess water.
  4. For baking, pierce sweet potatoes, wrap in foil, and bake at 400°F for 50-60 minutes until tender.
  5. For sweet mashed potatoes, mash the potatoes, then mix in butter, heavy cream, maple syrup, allspice, nutmeg, and salt.
  6. For savory mashed potatoes, roast garlic, then mix mashed sweet potatoes with butter, sour cream, roasted garlic, and black pepper, adding warm milk until fluffy.
  7. Season savory mashed potatoes with salt and pepper, and serve warm garnished with thyme or parsley.
