Savory Mashed Sweet Potatoes

Instructions
- Boil cubed sweet potatoes in salted water until tender.
- Drain the potatoes and return them to the pot.
- Mash the sweet potatoes to your desired consistency.
- Mix in most of the green onion, parsley, garlic, sour cream, butter, and remaining salt.
- Season with additional salt and black pepper to taste.
- Transfer to a serving bowl and garnish with reserved green onion and parsley, sour cream, and olive oil.
