Mashed Sweet Potatoes

Instructions
- Preheat the oven to 375ºF and prepare a baking dish.
- Cut the sweet potatoes in half lengthwise and slice off the top of the garlic head.
- Place the sweet potatoes and garlic on the baking pan, drizzle with olive oil, and season with salt and pepper.
- Roast for 20 minutes, then flip the sweet potatoes and garlic and roast for another 20 minutes until tender.
- Let the roasted sweet potatoes and garlic cool for 10 minutes.
- Scoop out the sweet potato flesh into a bowl and squeeze the roasted garlic into the bowl.
- Add Greek yogurt, butter, and remaining salt and pepper to the bowl.
- Use a hand mixer or immersion blender to mix until smooth.
- Garnish with fresh thyme and serve with additional butter if desired.
