Mashed Sweet Potatoes

Ingredients

The base

  • 5 large sweet potatoes
  • 1 head garlic

The seasoning and fats

  • 1.5 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 2 tablespoons unsalted butter

The creamy component

  • cup full-fat Greek yogurt

Optional garnishes

  • to taste fresh thyme
  • to taste unsalted butter

Instructions

  1. Preheat the oven to 375ºF and prepare a baking dish.
  2. Cut the sweet potatoes in half lengthwise and slice off the top of the garlic head.
  3. Place the sweet potatoes and garlic on the baking pan, drizzle with olive oil, and season with salt and pepper.
  4. Roast for 20 minutes, then flip the sweet potatoes and garlic and roast for another 20 minutes until tender.
  5. Let the roasted sweet potatoes and garlic cool for 10 minutes.
  6. Scoop out the sweet potato flesh into a bowl and squeeze the roasted garlic into the bowl.
  7. Add Greek yogurt, butter, and remaining salt and pepper to the bowl.
  8. Use a hand mixer or immersion blender to mix until smooth.
  9. Garnish with fresh thyme and serve with additional butter if desired.
