Mashed Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into ½-inch thick slices
  • cup water
  • 1 teaspoon minced fresh thyme
  • 2 teaspoons brown sugar, packed
  • 6 tablespoons half-and-half, warmed
  • 1 tablespoon butter, melted
  • ½ teaspoon salt
  • to taste freshly ground black pepper

Instructions

  1. In a large saucepan over medium-low heat, combine sweet potatoes, water, thyme, brown sugar, and salt.
  2. Cover and cook until the potatoes are fork-tender and all the water has been absorbed, about 25 to 30 minutes.
  3. Mash the potatoes until a few lumps remain.
  4. Stir in the half-and-half and melted butter, then season with salt and pepper to taste.
