Mashed Sweet Potatoes

Instructions
- In a large saucepan over medium-low heat, combine sweet potatoes, water, thyme, brown sugar, and salt.
- Cover and cook until the potatoes are fork-tender and all the water has been absorbed, about 25 to 30 minutes.
- Mash the potatoes until a few lumps remain.
- Stir in the half-and-half and melted butter, then season with salt and pepper to taste.
