Instructions
- Preheat the oven to 400°F and prick the sweet potatoes with a fork, then wrap each in foil.
- Place the wrapped sweet potatoes on a baking sheet and bake for 40 minutes.
- Turn the potatoes and continue baking until tender, about 30 to 50 minutes longer.
- While the potatoes are baking, brown the butter in a skillet over medium heat, stirring occasionally.
- Once the potatoes are cool enough to handle, peel them or scoop the flesh into a bowl.
- Mash the potatoes until chunky, then add the browned butter and maple syrup.
- Blend until combined, season with salt and pepper, and whip until creamy.
- Serve warm, topped with additional browned butter if desired.
