Mashed Sweet Potatoes

Ingredients

The potatoes

  • 4 lbs. sweet potatoes

The flavorings

  • 8 Tbsp salted butter
  • 1 Tbsp real maple syrup
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F and prick the sweet potatoes with a fork, then wrap each in foil.
  2. Place the wrapped sweet potatoes on a baking sheet and bake for 40 minutes.
  3. Turn the potatoes and continue baking until tender, about 30 to 50 minutes longer.
  4. While the potatoes are baking, brown the butter in a skillet over medium heat, stirring occasionally.
  5. Once the potatoes are cool enough to handle, peel them or scoop the flesh into a bowl.
  6. Mash the potatoes until chunky, then add the browned butter and maple syrup.
  7. Blend until combined, season with salt and pepper, and whip until creamy.
  8. Serve warm, topped with additional browned butter if desired.
