Ingredients

  • 2 cloves garlic, minced
  • pounds boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 tablespoons curry powder
  • ¼ teaspoon sea salt
  • 1 15-ounce can crushed tomatoes
  • ½ cup full-fat canned coconut milk
  • 2 tablespoons finely chopped cilantro (optional)

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Sauté the onion and garlic until fragrant.
  3. Add the chicken, curry powder, and crushed tomatoes, stirring to combine, and bring to a simmer.
  4. Cover and let the chicken cook for 12-15 minutes until cooked through, adding water if it looks dry.
  5. Stir in the coconut milk and heat through before serving.
  6. Garnish with cilantro if desired.
