Ingredients

The chicken and coating

  • cup all-purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 medium boneless skinless chicken breast (8 ounces), cubed
  • 3 teaspoons olive oil

The vegetables and spices

  • ¼ cup diced onion
  • ¼ cup diced green bell pepper
  • 1 teaspoon curry powder
  • ¼ teaspoon thyme

The sauce

  • 1 can stewed tomatoes (14.5 ounces)
  • 1 tablespoon currant jelly (or strawberry/grape)

To serve

  • to taste soy sauce (optional)
  • as needed white rice

Instructions

  1. 1. Mix flour, salt, and pepper in a bowl, then coat the chicken pieces in the mixture.
  2. 2. Heat 2 teaspoons of oil in a skillet over medium-high heat and brown the chicken on all sides, then set aside.
  3. 3. Reduce heat to medium, add the remaining oil, and sauté the onion and bell pepper until translucent.
  4. 4. Add curry powder and thyme, then return the chicken to the skillet.
  5. 5. Stir in the stewed tomatoes, cover, and simmer for 15 to 20 minutes until the chicken is cooked through.
  6. 6. Mix in the jelly and adjust salt to taste, simmer for another minute.
  7. 7. Serve the curry over rice with soy sauce if desired.
