Easy Chicken Curry

stewed tomatoes (14.5 ounces)

currant jelly (or strawberry/grape)

Instructions
- 1. Mix flour, salt, and pepper in a bowl, then coat the chicken pieces in the mixture.
- 2. Heat 2 teaspoons of oil in a skillet over medium-high heat and brown the chicken on all sides, then set aside.
- 3. Reduce heat to medium, add the remaining oil, and sauté the onion and bell pepper until translucent.
- 4. Add curry powder and thyme, then return the chicken to the skillet.
- 5. Stir in the stewed tomatoes, cover, and simmer for 15 to 20 minutes until the chicken is cooked through.
- 6. Mix in the jelly and adjust salt to taste, simmer for another minute.
- 7. Serve the curry over rice with soy sauce if desired.
