Instructions
- Preheat the oven to 425 degrees.
- Toss cauliflower florets with olive oil and salt, then spread on a baking sheet and roast for 30 minutes, stirring occasionally.
- Blend cashews, water, salt, pasta sauce, and red peppers until smooth and creamy.
- Cook pasta according to package directions, then toss with some of the sauce and most of the roasted cauliflower, reserving some cauliflower for topping.
