Ingredients

The crust

  • 12 pieces graham crackers
  • 2 tablespoons granulated sugar
  • 6 tablespoons salted butter, melted

The filling

  • 3 cups chopped strawberries
  • ½ cup granulated sugar
  • 2 tablespoons water
  • 6 ounces cream cheese, softened
  • 1 can (14-ounce) sweetened condensed milk
  • 1 tablespoon lemon zest
  • cup fresh lemon juice
  • 1 ¼ cups heavy cream

Instructions

  1. Preheat the oven to 350°F.
  2. Finely crush the graham crackers and mix with sugar and melted butter.
  3. Press the mixture into a pie plate and bake for 10-12 minutes until golden.
  4. Cool the crust completely.
  5. In a saucepan, combine strawberries, sugar, and water, then simmer for 5-6 minutes until soft.
  6. Strain the mixture to get about 1 cup of strawberry puree and let it cool.
  7. Beat the cream cheese until creamy, then add sweetened condensed milk and mix until smooth.
  8. Stir in the cooled strawberry syrup, lemon zest, and lemon juice until combined.
  9. Whip the heavy cream to soft peaks and fold it into the strawberry mixture.
  10. Spread the filling into the cooled crust and freeze for 4-5 hours until firm.
  11. Remove from the freezer 10-15 minutes before serving, slice, and serve with fresh strawberries if desired.
