Instructions
- Preheat the oven to 350°F.
- Finely crush the graham crackers and mix with sugar and melted butter.
- Press the mixture into a pie plate and bake for 10-12 minutes until golden.
- Cool the crust completely.
- In a saucepan, combine strawberries, sugar, and water, then simmer for 5-6 minutes until soft.
- Strain the mixture to get about 1 cup of strawberry puree and let it cool.
- Beat the cream cheese until creamy, then add sweetened condensed milk and mix until smooth.
- Stir in the cooled strawberry syrup, lemon zest, and lemon juice until combined.
- Whip the heavy cream to soft peaks and fold it into the strawberry mixture.
- Spread the filling into the cooled crust and freeze for 4-5 hours until firm.
- Remove from the freezer 10-15 minutes before serving, slice, and serve with fresh strawberries if desired.
