Couscous with Raisins and Almonds

The sautéed vegetables

Instructions
- Melt the butter in a medium saucepan over medium heat.
- Add the grated carrot, chopped onion, and cinnamon, cooking until softened.
- Stir in the couscous and raisins, cooking for a few minutes to toast the couscous.
- Add the broth and salt, stirring to combine, and bring to a bubble.
- Cover the pan and remove from heat, letting it sit for about 8 minutes until the liquid is absorbed.
- Fluff the couscous with a fork and mix in the orange zest, orange juice, almonds, parsley, and black pepper.
