Ingredients

Basic Ingredients

  • 1 cup couscous
  • 1 cup broth (veggie or chicken)
  • 2 tablespoons water
  • 1–2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Variations

  • 1 small cinnamon stick
  • ½ teaspoon cumin
  • ½ teaspoon granulated garlic
  • 2 tablespoons parsley or cilantro (for garnish)
  • 1 pinch saffron (crushed)
  • 1 tablespoon lemon zest
  • 1 clove garlic (finely minced)
  • 2 tablespoons flat-leaf parsley (for garnish)
  • 2 cloves garlic (finely minced)
  • ½–1 teaspoon Aleppo chili flakes
  • 1 tablespoon lemon juice

Instructions

  1. Toast the couscous in a dry skillet until fragrant and place it in a serving dish.
  2. Heat the broth in a small pot and add water, olive oil, salt, and pepper, along with any additional seasonings (except fresh herbs). Bring to a boil.
  3. Pour the boiling broth over the couscous, stir, and cover tightly with a lid or foil for 7 minutes.
  4. Remove the lid and fluff the couscous with a fork to separate the grains. Taste and adjust the salt if needed. Garnish before serving.
