Lemon Couscous

Ingredients

The base

  • 1 cup couscous
  • 1 1/4 cups low-sodium chicken broth

The flavorings

  • 2 Tbsp extra virgin olive oil
  • 1 1/2 tsp minced garlic
  • 1 tsp lemon zest
  • 2 Tbsp fresh lemon juice
  • Salt to taste

The garnish

  • 2 Tbsp chopped fresh parsley

Instructions

  1. Heat olive oil in a medium saucepan over medium-low heat.
  2. Add garlic and sauté until fragrant, about 20 seconds.
  3. Remove from heat, pour in chicken broth, lemon zest, lemon juice, and season with salt.
  4. Bring the mixture to a boil over medium-high heat.
  5. Pour in couscous, stir, then remove from heat and cover with a lid.
  6. Let it rest for 4-5 minutes off heat.
  7. Add parsley and fluff with a fork before serving.
