Instructions
- In a medium saucepan, bring the water to a boil.
- Add the couscous, 1 teaspoon of olive oil, and ½ teaspoon of salt, then stir.
- Cover the pot, remove it from heat, and let it stand for 5 minutes.
- Fluff the couscous with a fork and transfer it to a large bowl.
- Toss the couscous with the remaining olive oil, salt, garlic, lemon zest, lemon juice, parsley, and pine nuts.
- Transfer to a serving platter and garnish with additional pine nuts, parsley, and red pepper flakes if desired.
