Lemon Couscous

Ingredients

The couscous

  • 1 cup couscous
  • 1 cup water

The flavoring

  • 4 teaspoons extra-virgin olive oil
  • ¾ teaspoon sea salt
  • 2 cloves garlic
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • cup minced fresh parsley
  • 2 tablespoons pine nuts
  • optional red pepper flakes

Instructions

  1. In a medium saucepan, bring the water to a boil.
  2. Add the couscous, 1 teaspoon of olive oil, and ½ teaspoon of salt, then stir.
  3. Cover the pot, remove it from heat, and let it stand for 5 minutes.
  4. Fluff the couscous with a fork and transfer it to a large bowl.
  5. Toss the couscous with the remaining olive oil, salt, garlic, lemon zest, lemon juice, parsley, and pine nuts.
  6. Transfer to a serving platter and garnish with additional pine nuts, parsley, and red pepper flakes if desired.
