Ingredients

  • 1.5 cups pearl couscous
  • 1 fresh lemon
  • 2 Tbsp olive oil
  • ¼ tsp garlic powder
  • ¼ tsp salt
  • 1 English cucumber
  • ½ cup parsley
  • ¼ tsp freshly cracked pepper
  • 3 oz. feta cheese, crumbled

Instructions

  1. Boil water in a pot and cook the couscous for about 5 minutes until tender, then drain and rinse with cool water.
  2. Zest the lemon and squeeze out the juice, measuring about ½ tsp of zest and 3 Tbsp of juice.
  3. In a bowl, mix the lemon juice, olive oil, garlic powder, salt, and pepper.
  4. Chop the cucumber into quarter-rounds and roughly chop the parsley.
  5. Combine the cooled couscous, cucumber, parsley, lemon zest, and feta in a large bowl.
  6. Pour the dressing over the salad and mix well. Serve immediately or refrigerate until ready to eat.
