Lemony Cucumber Couscous Salad

Instructions
- Boil water in a pot and cook the couscous for about 5 minutes until tender, then drain and rinse with cool water.
- Zest the lemon and squeeze out the juice, measuring about ½ tsp of zest and 3 Tbsp of juice.
- In a bowl, mix the lemon juice, olive oil, garlic powder, salt, and pepper.
- Chop the cucumber into quarter-rounds and roughly chop the parsley.
- Combine the cooled couscous, cucumber, parsley, lemon zest, and feta in a large bowl.
- Pour the dressing over the salad and mix well. Serve immediately or refrigerate until ready to eat.
