Ingredients

The cupcakes

  • 1 cup flour
  • ½ cup cocoa powder
  • 1 cup sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup almond milk
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

The frosting

  • 8 oz vegan cream cheese
  • ½ cup powdered sugar
  • 1 tsp peppermint extract
  • 2 tbsp coconut oil
  • 1 tbsp cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, mix the dry ingredients for the cupcakes until well combined.
  3. In another bowl, whisk together the wet ingredients for the cupcakes.
  4. Combine the wet and dry ingredients and mix until smooth.
  5. Pour the batter into the cupcake liners, filling them about ¾ full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely before frosting.
  8. In a bowl, beat together the ingredients for the frosting until smooth.
  9. Frost the cooled cupcakes with the peppermint frosting.
