Ingredients

The cupcakes

The frosting

  • 1 cup unsalted butter
  • 3–4 cups confectioners’ sugar
  • 2 tablespoons heavy cream
  • ¼ teaspoon peppermint extract
  • 2 drops green gel food coloring
  • salt to taste salt
  • cup mini chocolate chips

Instructions

  1. Preheat the oven and prepare muffin pans with liners.
  2. Boil water and mix with cocoa powder until smooth; cool.
  3. Whisk together flour, baking powder, and salt.
  4. Beat butter and sugar until creamy, then add eggs and vanilla.
  5. Combine flour mixture and cocoa mixture until just combined.
  6. Fill muffin liners with batter and bake until done.
  7. Cool cupcakes completely before frosting.
  8. Beat butter for frosting until creamy, then add sugar, cream, extract, and food coloring.
  9. Mix in chocolate chips and frost the cooled cupcakes.
