Instructions
- 1. Preheat the oven to 350°F.
- 2. In a heatproof mixing bowl, whisk together cocoa powder and baking soda, then add boiling water and let cool for 5 minutes.
- 3. In another bowl, blend melted butter, vegetable oil, granulated sugar, vanilla, and salt using an electric mixer.
- 4. Mix in the egg and egg yolk, then blend in the lukewarm cocoa mixture and heavy cream.
- 5. Add flour and mix until well combined.
- 6. Divide the batter among 12 paper-lined muffin cups, filling each about 2/3 full.
- 7. Bake for 17-20 minutes or until a toothpick comes out clean.
- 8. Allow to cool before frosting.
- 9. For the frosting, cream the butter until fluffy, then mix in powdered sugar, cocoa powder, heavy cream, and vanilla until light and fluffy.
