Ingredients

The cupcakes

  • ¼ cup unsweetened cocoa powder
  • 2 Tbsp unsweetened cocoa powder
  • ½ tsp baking soda
  • ½ cup boiling water
  • ¼ cup unsalted butter, melted
  • 3 Tbsp vegetable oil
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • heaping ¼ tsp salt
  • 1 large egg
  • 1 large egg yolk
  • ¼ cup heavy cream
  • ¾ cup all-purpose flour
  • 2 Tbsp all-purpose flour

The frosting

  • ¾ cup butter, softened
  • cups powdered sugar
  • 6 Tbsp unsweetened cocoa powder
  • 2 Tbsp heavy cream
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 350°F.
  2. 2. In a heatproof mixing bowl, whisk together cocoa powder and baking soda, then add boiling water and let cool for 5 minutes.
  3. 3. In another bowl, blend melted butter, vegetable oil, granulated sugar, vanilla, and salt using an electric mixer.
  4. 4. Mix in the egg and egg yolk, then blend in the lukewarm cocoa mixture and heavy cream.
  5. 5. Add flour and mix until well combined.
  6. 6. Divide the batter among 12 paper-lined muffin cups, filling each about 2/3 full.
  7. 7. Bake for 17-20 minutes or until a toothpick comes out clean.
  8. 8. Allow to cool before frosting.
  9. 9. For the frosting, cream the butter until fluffy, then mix in powdered sugar, cocoa powder, heavy cream, and vanilla until light and fluffy.
