Ingredients

The cupcakes

  • 1 cup all-purpose flour
  • ½ cup unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • cup vegetable oil
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup buttermilk
  • ½ cup hot water or hot coffee

The frosting

  • 1 cup unsalted butter
  • 4 cups confectioners’ sugar
  • ¼ cup heavy cream, half-and-half, or whole milk
  • 2 teaspoons pure vanilla extract
  • to taste none salt
  • optional none sprinkles

Instructions

  1. Preheat the oven to 350°F (177°C) and line a muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, whisk together the oil, sugar, egg, vanilla, and buttermilk until combined.
  4. Add the dry ingredients to the wet ingredients along with the hot water or coffee, and mix until smooth.
  5. Fill the cupcake liners ⅔ full with batter and bake for 20-22 minutes until a toothpick comes out clean.
  6. Let the cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. To make the frosting, beat the softened butter until creamy, then add the confectioners' sugar, cream, and vanilla, mixing until smooth.
  8. Frost the cooled cupcakes and add sprinkles if desired.
