Instructions
- Preheat the oven to 350°F (177°C) and line a muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In a large bowl, whisk together the oil, sugar, egg, vanilla, and buttermilk until combined.
- Add the dry ingredients to the wet ingredients along with the hot water or coffee, and mix until smooth.
- Fill the cupcake liners ⅔ full with batter and bake for 20-22 minutes until a toothpick comes out clean.
- Let the cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- To make the frosting, beat the softened butter until creamy, then add the confectioners' sugar, cream, and vanilla, mixing until smooth.
- Frost the cooled cupcakes and add sprinkles if desired.
