Instructions
- Preheat the oven to 350°F and prepare cupcake pans with liners and non-stick spray.
- Sift together the flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together the water, melted butter, and vegetable oil.
- Combine the flour mixture and the melted butter mixture in a mixer, mixing on low speed until combined.
- Add the eggs, buttermilk, and vanilla, beating until smooth.
- Divide the batter into the cupcake liners, filling each about ¾ full.
- Bake for 20-25 minutes until a toothpick comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat the butter until pale and fluffy, then add peanut butter, ½ cup powdered sugar, milk, and vanilla, mixing until smooth.
- Gradually add the remaining powdered sugar, mixing until smooth.
- Once the cupcakes are cool, frost them with the peanut butter frosting and sprinkle with chopped peanuts if desired.
