Peanut Butter Frosting Ingredients

Instructions
- Prepare 24 baking cups with paper liners.
- Cream butter and sugar until light and fluffy, then add eggs one at a time and mix in vanilla.
- In a separate bowl, whisk together flour, cocoa, baking soda, and salt.
- In another bowl, stir together buttermilk and coffee.
- Combine dry ingredients with the creamed mixture alternately with buttermilk and coffee.
- Fill baking cups with batter, place a peanut butter cup on top, and bake at 375°F for 15-20 minutes.
- Cool for 10 minutes before transferring to wire racks to cool completely.
- Prepare frosting by beating peanut butter, butter, and vanilla until smooth, then add sugar, salt, and cream and beat until fluffy.
- Top cooled cupcakes with peanut butter frosting and optionally drizzle with melted chocolate.
