Ingredients

Cupcake Ingredients

  • ½ cup butter, softened
  • cups granulated sugar
  • 2 units eggs
  • 2 tsp vanilla extract
  • cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ½ cup buttermilk
  • ½ cup coffee, lukewarm
  • 24 units mini peanut butter cups, unwrapped
  • optional unit melted chocolate for drizzling

Peanut Butter Frosting Ingredients

  • 2 cups creamy peanut butter
  • ½ cup butter, at room temperature
  • 2 tsp vanilla extract
  • 2 cups powdered sugar
  • ¼ tsp salt
  • ¼ cup heavy cream

Instructions

  1. Prepare 24 baking cups with paper liners.
  2. Cream butter and sugar until light and fluffy, then add eggs one at a time and mix in vanilla.
  3. In a separate bowl, whisk together flour, cocoa, baking soda, and salt.
  4. In another bowl, stir together buttermilk and coffee.
  5. Combine dry ingredients with the creamed mixture alternately with buttermilk and coffee.
  6. Fill baking cups with batter, place a peanut butter cup on top, and bake at 375°F for 15-20 minutes.
  7. Cool for 10 minutes before transferring to wire racks to cool completely.
  8. Prepare frosting by beating peanut butter, butter, and vanilla until smooth, then add sugar, salt, and cream and beat until fluffy.
  9. Top cooled cupcakes with peanut butter frosting and optionally drizzle with melted chocolate.
