Ingredients

The cake

  • 1 cup all-purpose flour
  • 2 tablespoons all-purpose flour
  • 1 cup white granulated sugar
  • 2 tablespoons white granulated sugar
  • ½ cup baking cocoa powder
  • teaspoons instant espresso powder
  • 1 teaspoon baking soda
  • ¾ teaspoon baking powder
  • ¾ teaspoon salt
  • 1 large egg
  • 1 large egg yolk
  • ½ cup buttermilk
  • ½ cup warm water
  • 1 tablespoon olive oil
  • 2 teaspoons vanilla extract

The frosting

  • cups unsalted butter
  • 2 tablespoons heavy cream
  • 4 cups powdered sugar
  • ¼ teaspoon salt
  • ¼ teaspoon peppermint extract
  • 1 drop blue food coloring
  • 1 drop yellow food coloring
  • 1 tablespoon cacao nibs

Instructions

  1. Preheat the oven to 350°F and prepare the cake pans.
  2. Mix the dry ingredients for the cake in a large bowl.
  3. Add the wet ingredients to the dry mixture and combine until smooth.
  4. Divide the batter into the prepared pans and bake for 27 to 30 minutes.
  5. While the cakes cool, prepare the frosting by blending cacao nibs and mixing butter with heavy cream.
  6. Gradually add powdered sugar and peppermint extract, then color the frosting and mix in the cacao nibs.
  7. Assemble the cake by layering with frosting between the layers and on top.
