Instructions
- Preheat the oven to 350°F and prepare the cake pans.
- Mix the dry ingredients for the cake in a large bowl.
- Add the wet ingredients to the dry mixture and combine until smooth.
- Divide the batter into the prepared pans and bake for 27 to 30 minutes.
- While the cakes cool, prepare the frosting by blending cacao nibs and mixing butter with heavy cream.
- Gradually add powdered sugar and peppermint extract, then color the frosting and mix in the cacao nibs.
- Assemble the cake by layering with frosting between the layers and on top.
