Instructions
- Preheat the oven and prepare the cake pan.
- Cream together sugar and butter, then add olive oil and eggs.
- Mix in vanilla and combine dry ingredients in a separate bowl.
- Fold the dry ingredients into the wet mixture, then add hot water.
- Pour the batter into the prepared pan and bake until done.
- Cool the cake in the pan for a short time before transferring to a rack.
- Prepare the ganache by melting chocolate with cream and salt over simmering water.
- Make the peppermint cream by beating together butter, shortening, mint, sugar, extract, and milk.
- Spread the peppermint cream over the cooled cake.
- Pour ganache over the frosted cake and chill before serving.
