Ingredients

The cake

  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ¼ cup extra-virgin olive oil
  • 2 large eggs
  • 1 Tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup hot water

Chocolate ganache

  • 2 cups dark chocolate
  • cups heavy cream
  • ¼ teaspoon salt
  • 2 teaspoons pure vanilla extract

Peppermint cream

  • ½ cup unsalted butter
  • ½ cup vegetable shortening
  • 2 Tablespoons fresh mint
  • cups confectioners’ sugar
  • 2 teaspoons peppermint extract
  • 3 Tablespoons whole milk

Instructions

  1. Preheat the oven and prepare the cake pan.
  2. Cream together sugar and butter, then add olive oil and eggs.
  3. Mix in vanilla and combine dry ingredients in a separate bowl.
  4. Fold the dry ingredients into the wet mixture, then add hot water.
  5. Pour the batter into the prepared pan and bake until done.
  6. Cool the cake in the pan for a short time before transferring to a rack.
  7. Prepare the ganache by melting chocolate with cream and salt over simmering water.
  8. Make the peppermint cream by beating together butter, shortening, mint, sugar, extract, and milk.
  9. Spread the peppermint cream over the cooled cake.
  10. Pour ganache over the frosted cake and chill before serving.
