Ingredients

The brownies

  • 1 cup unsalted butter
  • 8 ounces semi-sweet chocolate, coarsely chopped
  • cups granulated sugar
  • ½ cup packed light brown sugar
  • 4 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 3 tablespoons all-purpose flour
  • ¼ cup natural unsweetened cocoa powder

The mint frosting layer

  • ½ cup unsalted butter, softened to room temperature
  • 2 cups confectioners’ sugar
  • 2 tablespoons milk
  • teaspoons peppermint extract
  • 1 drop liquid or gel green food coloring (optional)

The chocolate layer

  • ½ cup unsalted butter
  • 1 heaping cup semi-sweet chocolate chips

Instructions

  1. Melt the butter and chopped chocolate together, then let cool slightly.
  2. Preheat the oven to 350°F (177°C) and prepare a baking pan with parchment paper.
  3. Whisk the sugars into the cooled chocolate mixture, then add eggs and vanilla, mixing until smooth.
  4. Fold in salt, flour, and cocoa powder, then pour the batter into the prepared pan and bake for 35-36 minutes.
  5. Allow the brownies to cool completely in the pan.
  6. For the mint frosting, beat butter until smooth, then add confectioners’ sugar and milk, mixing until creamy.
  7. Add peppermint extract and food coloring, then frost the cooled brownies and refrigerate to set.
  8. For the chocolate layer, melt butter and chocolate chips together, then pour over the mint frosting and spread evenly.
  9. Chill the brownies again until the chocolate layer is set, then cut into squares.
