Instructions
- Preheat the oven according to the brownie mix instructions and prepare a pan with foil and cooking spray.
- Mix the brownie ingredients as per the package instructions, adding mint extract, and bake until done.
- Allow the brownies to cool completely.
- For the mint layer, beat together butter and cream cheese until smooth, then add heavy cream and mix well.
- Gradually add powdered sugar, mint extract, and food coloring, and mix until fluffy.
- Spread the mint layer over the cooled brownies and chill until firm.
- For the chocolate topping, heat heavy cream, chocolate chips, and butter over low heat until melted and smooth.
- Let the chocolate topping cool slightly, then pour it over the mint layer and refrigerate until set.
- Use the foil to lift the brownies out of the pan, cut into squares, and serve.
