Instructions
- Preheat the oven to 350°F and grease an 8x8-inch baking pan.
- Melt the butter and chocolate together in a heat-proof bowl over simmering water.
- Once melted, let the mixture cool, then beat in the eggs, vanilla, and sugar.
- Add the flours and mix until blended, then pour into the prepared pan and bake for 20-25 minutes.
- Let the brownies cool completely.
- For the mint layer, beat together the butter, powdered sugar, milk, peppermint extract, and food coloring until smooth.
- Spread the mint mixture over the cooled brownies and refrigerate until firm.
- For the topping, melt the chocolate and butter together, then drizzle over the mint layer and spread evenly.
- Chill until set, then cut into squares and enjoy.
