Ingredients

The Brownies

  • 4 ounces unsweetened baking chocolate
  • 1 cup butter
  • 4 large eggs
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • ½ teaspoon baking powder

The Frosting

  • 2 cups powdered sugar
  • 4 tablespoons butter
  • 1 1/2 teaspoons peppermint extract
  • 1-2 tablespoons milk
  • to taste none green food coloring

The Chocolate Glaze

  • 6 ounces semi-sweet or dark chocolate chips
  • 6 tablespoons butter

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13 inch pan with foil or parchment, extending the edges.
  2. Melt unsweetened chocolate and butter in a microwave-safe bowl until smooth and set aside to cool.
  3. Beat eggs, sugar, and vanilla with an electric mixer for 2 minutes.
  4. Combine flour and baking powder, then slowly add melted chocolate to the egg mixture and mix until combined.
  5. Pour batter into the prepared pan and bake for 20-30 minutes, until a knife comes out clean.
  6. Cool the brownies completely, then chill in the fridge or freezer.
  7. For the frosting, combine all frosting ingredients and beat until light and fluffy, adding milk as needed.
  8. Spread the frosting over the cooled brownies and chill again.
  9. For the chocolate glaze, melt chocolate chips and butter together until smooth, then cool slightly.
  10. Spread the chocolate glaze over the frosting layer and return to the fridge to cool.
  11. Once the chocolate has hardened, lift the brownies out of the pan using the foil edges and cut into squares.
