Fudgy Chocolate Mint Brownies

Ingredients

  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup light brown sugar
  • ¾ teaspoon peppermint extract
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 9 pieces Thin Mint cookies or any mint chocolate wafer cookie
  • ¼ teaspoon flaked salt (optional)

Instructions

  1. Preheat the oven to 350ºF and prepare an aluminum loaf pan with nonstick spray.
  2. Mix cocoa powder, flour, and salt in a medium bowl and sift to remove lumps.
  3. In a large bowl, combine melted butter, brown sugar, and peppermint extract using a mixer.
  4. Melt the chocolate chips in a microwave, stirring until smooth, and set aside.
  5. Add eggs to the butter mixture and mix until combined.
  6. Incorporate the melted chocolate into the mixture and combine well.
  7. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  8. Pour half of the batter into the prepared pan, layer with Thin Mint cookies, then pour the remaining batter on top.
  9. Optionally sprinkle with chopped Thin Mints and bake for 22-25 minutes.
  10. Let cool for 10-15 minutes before removing from the pan.
