Fudgy Chocolate Mint Brownies

Instructions
- Preheat the oven to 350ºF and prepare an aluminum loaf pan with nonstick spray.
- Mix cocoa powder, flour, and salt in a medium bowl and sift to remove lumps.
- In a large bowl, combine melted butter, brown sugar, and peppermint extract using a mixer.
- Melt the chocolate chips in a microwave, stirring until smooth, and set aside.
- Add eggs to the butter mixture and mix until combined.
- Incorporate the melted chocolate into the mixture and combine well.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Pour half of the batter into the prepared pan, layer with Thin Mint cookies, then pour the remaining batter on top.
- Optionally sprinkle with chopped Thin Mints and bake for 22-25 minutes.
- Let cool for 10-15 minutes before removing from the pan.
