Ingredients

The cake

  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup natural unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ¼ cup vegetable oil
  • ½ teaspoon vanilla extract
  • cup very hot water or coffee

The frosting

  • 4 ounces cream cheese
  • ½ cup salted butter
  • 1 teaspoon vanilla extract
  • cups powdered sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 350°F and prepare the cake pans.
  2. In a large bowl, mix the dry ingredients for the cake.
  3. Add the wet ingredients (except for the hot water) and beat for 2 minutes.
  4. Stir in the hot water until well combined.
  5. Divide the batter between the prepared cake pans and tap to remove air bubbles.
  6. Bake for 22 to 27 minutes until a toothpick comes out clean.
  7. Cool the cakes for 10 to 15 minutes before transferring to a wire rack to cool completely.
  8. For the frosting, beat together cream cheese and butter until smooth.
  9. Add vanilla, then mix in powdered sugar and cocoa until creamy.
  10. Frost the cooled cakes as desired.
