Flourless Chocolate Cake

Instructions
- Preheat the oven to 350°F.
- Grease a 9-inch springform pan and line the bottom with parchment paper, then grease the parchment.
- Mix ¾ cup of sugar with ⅓ cup of water and heat until the sugar is melted.
- Add chopped chocolate to the sugar-water mixture in a heatproof bowl over simmering water and stir until melted.
- Once mostly melted, add the butter and mix until fully incorporated.
- In another bowl, beat the eggs and remaining ¼ cup of sugar until doubled in volume.
- Fold the whipped eggs into the melted chocolate mixture until well blended.
- Pour the batter into the prepared springform pan.
- Place the pan in a larger baking dish and add enough water to reach 1 inch up the side of the springform pan.
- Bake for 40-45 minutes or until the cake is set.
- Remove from the water bath and cool in the pan.
- Refrigerate overnight, then loosen the edges with a knife and open the springform pan.
