Flourless Chocolate Cake

Ingredients

  • 12 oz semi-sweet chocolate
  • 1 cup granulated sugar
  • 8 oz unsalted butter
  • 5 large eggs
  • cup water

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch springform pan and line the bottom with parchment paper, then grease the parchment.
  3. Mix ¾ cup of sugar with ⅓ cup of water and heat until the sugar is melted.
  4. Add chopped chocolate to the sugar-water mixture in a heatproof bowl over simmering water and stir until melted.
  5. Once mostly melted, add the butter and mix until fully incorporated.
  6. In another bowl, beat the eggs and remaining ¼ cup of sugar until doubled in volume.
  7. Fold the whipped eggs into the melted chocolate mixture until well blended.
  8. Pour the batter into the prepared springform pan.
  9. Place the pan in a larger baking dish and add enough water to reach 1 inch up the side of the springform pan.
  10. Bake for 40-45 minutes or until the cake is set.
  11. Remove from the water bath and cool in the pan.
  12. Refrigerate overnight, then loosen the edges with a knife and open the springform pan.
