Instructions
- Preheat oven to 375°F and prepare a baking sheet with foil.
- Lay bacon slices in a single layer and rub with brown sugar.
- Bake bacon until crisp (about 20-25 minutes) and let cool.
- Reserve 2 tablespoons of bacon grease in a soup pot over medium heat.
- Add diced onion to the pot and cook for 5-6 minutes until tender.
- Add minced garlic and cook for an additional 30 seconds.
- Push onions to the side and add butter until melted, then add flour and cook for about a minute.
- Slowly whisk in chicken broth until smooth, then add salt, pepper, smoked paprika, and sage.
- Bring the mixture to a boil, then reduce to a simmer for 5 minutes.
- Stir in the mashed sweet potatoes, then turn off the heat and add vinegar and cheese.
- Blend the soup until smooth if desired.
- Serve topped with bacon and other desired toppings.
