Instructions
- Preheat the oven to 425°F (218°C) and line a baking sheet with foil or parchment.
- Wash and dry the sweet potatoes, then pierce them several times with a fork.
- Drizzle olive oil over the potatoes and season with salt and pepper, rubbing the oil into the skins.
- Bake for 40-50 minutes for medium potatoes or 50-60 minutes for large potatoes, flipping halfway through.
- Let the potatoes rest for 5 minutes after baking, then cut them open and add desired toppings.
