Easy Baked Sweet Potatoes

Ingredients

The potatoes

  • 3-4 medium/large Sweet Potatoes

The seasoning

  • to taste Ghee (or avocado oil or extra-virgin olive oil)
  • to taste Salt
  • to taste Pepper

Optional garnish

  • additional ghee Ghee
  • to taste Chopped parsley

Instructions

  1. Select evenly shaped sweet potatoes of similar size.
  2. Preheat the oven to 400°F.
  3. Slice each potato lengthwise into 4 even quarters.
  4. Place the quarters on aluminum foil and spread a thin layer of ghee on both sides, then sprinkle with salt and pepper.
  5. Reconstruct the potatoes by putting the pieces back together.
  6. Wrap the potatoes tightly in aluminum foil.
  7. Place the wrapped potatoes seam side up on a dark roasting pan.
  8. Bake in the oven for 40 to 75 minutes, checking for softness by squeezing.
  9. Let the baked potatoes rest in the foil for about 5 minutes.
  10. Serve immediately with a dab of ghee and sprinkle of parsley, or let cool completely for later use.
