Easy Baked Sweet Potatoes

Instructions
- Select evenly shaped sweet potatoes of similar size.
- Preheat the oven to 400°F.
- Slice each potato lengthwise into 4 even quarters.
- Place the quarters on aluminum foil and spread a thin layer of ghee on both sides, then sprinkle with salt and pepper.
- Reconstruct the potatoes by putting the pieces back together.
- Wrap the potatoes tightly in aluminum foil.
- Place the wrapped potatoes seam side up on a dark roasting pan.
- Bake in the oven for 40 to 75 minutes, checking for softness by squeezing.
- Let the baked potatoes rest in the foil for about 5 minutes.
- Serve immediately with a dab of ghee and sprinkle of parsley, or let cool completely for later use.
