Instructions
- Preheat the oven to 425ºF and line a baking sheet with parchment paper.
- Scrub the sweet potatoes under running water to remove dirt and dry them with a towel.
- Pierce the sweet potatoes with a fork or knife to vent, then rub them with olive oil.
- Arrange the potatoes in a single layer on the baking sheet.
- Bake for 45 to 60 minutes, until a fork can easily pierce the thickest part.
- Let the sweet potatoes cool briefly, then slice and serve warm with your favorite toppings.
